Ingredients (2 persons' portion)
A (200 g of aibiki meat (ground beef and pork), 1/2 finely chopped onion, 1 egg, 1/2 cups dried breadcrumbs, pinch of nutmeg, salt, and pepper)
B (1 tablespoon red wine, 1tablespoon soy sauce, 2 teaspoons honey, 1teaspoon coarse grain mustard)
1tablespoon olive oil
Garnish (corn saute (sauteed in butter, seasoned lightly with salt and pepper), watercres)
Mix B well in a bowl.
Combine and mix B with A, divide the mixture into four equal parts, and mold into round shapes.
Heat up and grease a frying pan, line up 【2】, brown on both sides over a strong medium flame. Pour hot water (not shown in Ingredients) to about 1/3 the height of the hamburg steaks, cover with a lid, and steam over a medium flame. Serve once the steam is gone and the steaks are cooked on the inside as well.
Add 【1】 to 【3】 in the frying pan and cook with a high flame. Turn off the flame when it boils down a bit and spread over the hamburg steaks on the serving dish. Garnish to taste (with the corn saute and watercress).
