Cut the onion, carrot and shiitake mushroom into thin strips, and cut the shimeji mushrooms and king oyster mushroom into bite-sized pieces.
Preheat the oven to 200 °C. Place the salmon fillets, vegetables and mushrooms on a sheet of foil. Put the butter on top and sprinkle on salt and pepper. Wrap up into a foil packet, and bake until the salmon is just cooked through, about 10 minutes.
